In this episode we sit down with CA Richardson of Flats Class University and discuss his background, how he developed as an outdoor educator, tips on growing as an angler, boat snacks, and his smoked rib recipe (below).

Step One
Brine overnight with ice water, salt, and 6-8 cans of Coke or Dr Pepper.


Step Two
Remove silver skin, pat dry, and kosher salt and pepper. Leave in the fridge for an hour.
*Be careful to not over salt!

Step Three
Smear on yellow mustard, and add your preferred rub. I recommend the original Traeger rub.

Step Four
Smoke without foil for 2.5 hours. Half way through apply a generous amount of Apple Juice.

Step Five
Add margarine and brown sugar, wrap tightly in foil, and cook meat side down for 1.5 hours.

Step Six
Coat in BBQ sauce and cook for another 30 minutes. I like Texas Spicy BBQ Sauce or Traeger Que.
